  • 8 large eggs
  • 1 cup fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup burrata cheese, torn into pieces
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Add the asparagus and sauté for about 3-4 minutes until tender.
  4. Pour the egg mixture over the asparagus and cook for 2-3 minutes until the edges start to set.
  5. Add the burrata and Parmesan cheese on top.
  6. Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is set.
  7. Remove from the oven, let it cool slightly, slice, and serve.
