  • 4 cups vegetable broth
  • 1 cup diced turkey bacon
  • 2 cups chopped carrots
  • 2 cups diced potatoes
  • 1 cup chopped celery
  • 1 cup diced onions
  • 2 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and set aside.
  2. Add onions, garlic, carrots, and celery to the pot and sauté until tender.
  3. Stir in potatoes, broth, thyme, and rosemary. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes until vegetables are soft.
  5. Return turkey bacon to the pot and season with salt and pepper.
  6. Serve warm.
