Baked Chocolate Donuts with Raspberries

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together the flour, cocoa powder, sugars, baking powder, baking soda, and salt.
  3. In another bowl, beat the egg, then add in buttermilk, melted butter, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Gently fold in the raspberries.
  6. Pour the batter into the donut pan, filling each cavity about 2/3 full.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For a sweeter taste, you can add a dusting of powdered sugar on top.
  • Donuts are best enjoyed fresh but can be stored for a few days.
