8 ounces elbow macaroni
2 tablespoons olive oil
1 large onion, sliced
8 ounces mushrooms, sliced
1/4 cup balsamic vinegar
2 cups shredded cheddar cheese
1 cup milk
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon salt
Instructions
Cook the macaroni according to package instructions. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10-15 minutes.
Add sliced mushrooms to the skillet and cook until they release their moisture and begin to brown.
Stir in balsamic vinegar and cook for an additional 2 minutes.
In a large pot, combine cooked macaroni, caramelized onion and mushroom mixture, shredded cheddar cheese, milk, garlic powder, black pepper, and salt. Mix until well combined.
Cook over low heat until the cheese is melted and the sauce is creamy.
Serve warm and enjoy!
Notes
For extra creaminess, you can add more cheese or a dollop of cream.
