  • 2 tablespoons blackening seasoning
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled

Instructions

  1. In a bowl, toss shrimp with blackening seasoning until evenly coated.
  2. Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until blackened and cooked through.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and feta cheese.
  4. Toss the salad with the cooked shrimp and drizzle with vinaigrette.
