Breakfast Potato Tacos

A delicious recipe for breakfast potato tacos featuring turkey bacon!

  • 2 large potatoes, diced
  • 4 slices turkey bacon
  • 1 bell pepper, chopped
  • 2 green onions, sliced
  • 1 teaspoon smoked paprika
  • 8 small tortillas
  • 1 cup cheese, shredded

Instructions

  1. In a frying pan, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same pan, add diced potatoes and cook until golden brown.
  3. Add chopped bell pepper and smoked paprika, and sauté until soft.
  4. Stir in the bacon and green onions before serving.
  5. Warm tortillas and fill them with the potato mixture and cheese.
