Cajun Potato Soup

A hearty and flavorful Cajun potato soup made with turkey bacon, perfect for cold days.

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, sliced

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onions and garlic until translucent.
  3. Add the diced potatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in the heavy cream, Cajun seasoning, salt, and black pepper.
  6. Blend the soup until smooth, then add the cooked turkey bacon back in.
  7. Serve topped with green onions.

Notes

  • This soup can be made in advance and tastes even better the next day.
