- 2 cups penne pasta
- 1 large eggplant, diced
- 2 large onions, sliced
- 2 cloves garlic, minced
- 2 cups canned tomatoes, crushed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried basil
- Preheat the oven to 400°F (200°C).
- In a baking dish, toss the diced eggplant with olive oil, salt, and pepper. Roast for 25-30 minutes.
- In a skillet, heat olive oil over medium heat and add sliced onions. Cook until caramelized, about 15-20 minutes.
- Add minced garlic to the onions and cook for an additional minute.
- Stir in the crushed tomatoes and dried basil. Simmer for 10 minutes.
- Meanwhile, cook the penne pasta according to package instructions. Drain and add to the skillet.
- Toss the pasta with the sauce and roasted eggplant.
- Serve hot.
