Caramelized Onions, Roasted Eggplant, and Tomato Penne Pasta (vegan, gluten-free)

This delicious dish combines caramelized onions, roasted eggplant, and tomato with penne pasta, making it vegan and gluten-free.

  • 2 cups penne pasta
  • 1 large eggplant, diced
  • 2 large onions, sliced
  • 2 cloves garlic, minced
  • 2 cups canned tomatoes, crushed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, toss the diced eggplant with olive oil, salt, and pepper. Roast for 25-30 minutes.
  3. In a skillet, heat olive oil over medium heat and add sliced onions. Cook until caramelized, about 15-20 minutes.
  4. Add minced garlic to the onions and cook for an additional minute.
  5. Stir in the crushed tomatoes and dried basil. Simmer for 10 minutes.
  6. Meanwhile, cook the penne pasta according to package instructions. Drain and add to the skillet.
  7. Toss the pasta with the sauce and roasted eggplant.
  8. Serve hot.

  • For added flavor, sprinkle with nutritional yeast before serving.
