  • 1/4 cup brown sugar
  • 4 large eggs
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, and salt.
  3. In a separate bowl, whisk the granulated sugar, brown sugar, and eggs until light and fluffy.
  4. Gradually add the dry ingredients into the wet mixture and fold in the grated carrots and walnuts.
  5. Spread the batter evenly in the prepared baking sheet and bake for 15-20 minutes.
  6. Once baked, remove from the oven and let it cool for a few minutes. Invert onto a clean kitchen towel dusted with powdered sugar.
  7. Roll the cake tightly with the towel and let it cool completely.
  8. For the filling, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Unroll the cooled cake and spread the cream cheese mixture evenly over the top.
  10. Roll the cake again without the towel and chill before slicing.
