  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and oil.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, beat the softened cream cheese with the powdered sugar and lemon juice until smooth.
  7. Pour half of the carrot cake batter into the prepared bundt pan.
  8. Drop spoonfuls of the cream cheese mixture over the batter.
  9. Pour the remaining batter on top and smooth it out.
  10. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  11. Let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
