Chinese Chicken Fried Rice

A delicious twist on traditional fried rice using turkey bacon for added flavor.

Ingredients

  • 2 cups cooked rice
  • 4 strips turkey bacon, chopped
  • 1 cup mixed vegetables (peas and carrots)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced

Instructions

  1. In a large pan, heat vegetable oil over medium heat.
  2. Add chopped turkey bacon and cook until crispy.
  3. Stir in garlic and mixed vegetables; cook for 3-4 minutes.
  4. Push vegetables to the side and pour in beaten eggs, scrambling until cooked.
  5. Add cooked rice to the pan, breaking up clumps.
  6. Pour soy sauce over the rice and mix well.
  7. Fold in sliced green onions and serve hot.

Notes

  • For extra flavor, consider adding sesame oil.
  • Can substitute turkey bacon with regular bacon if desired.
