A decadent chocolate cake that combines the goodness of zucchini and bananas, topped with a creamy vanilla coffee frosting for the perfect finish.

  • 1 cup mashed bananas
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 2 tbsp brewed coffee (for frosting)
  • 1/4 cup butter, softened (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, mix together the grated zucchini, mashed bananas, oil, sugar, and eggs until well combined.
  3. In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the frosting by beating together the butter, powdered sugar, coffee, and vanilla until smooth.
  8. Once the cake has cooled, frost it with the vanilla coffee frosting.

Notes

  • For added flavor, consider adding chocolate chips to the batter.
