- 1 cup grated zucchini
- 1 cup mashed bananas
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup vegetable oil
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup powdered sugar (for frosting)
- 2 tbsp brewed coffee (for frosting)
- 1/4 cup butter, softened (for frosting)
- 1 tsp vanilla extract (for frosting)
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a large bowl, mix together the grated zucchini, mashed bananas, oil, sugar, and eggs until well combined.
- In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the frosting by beating together the butter, powdered sugar, coffee, and vanilla until smooth.
- Once the cake has cooled, frost it with the vanilla coffee frosting.
