  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk together buttermilk, melted butter, egg, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed. Do not overmix.
  5. In a small bowl, mix brown sugar and cinnamon for the filling.
  6. Fill muffin cups halfway with batter, sprinkle with filling, then top with remaining batter.
  7. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  8. For the glaze, mix powdered sugar with milk until smooth and drizzle over cooled muffins.

Notes

  • For a richer flavor, substitute whole milk for buttermilk.
