- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
- Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, whisk together buttermilk, melted butter, egg, and vanilla extract.
- Combine wet and dry ingredients until just mixed. Do not overmix.
- In a small bowl, mix brown sugar and cinnamon for the filling.
- Fill muffin cups halfway with batter, sprinkle with filling, then top with remaining batter.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- For the glaze, mix powdered sugar with milk until smooth and drizzle over cooled muffins.
Notes
- For a richer flavor, substitute whole milk for buttermilk.
