  • 1 cup whole wheat flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/2 cup powdered sugar
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, mix the milk, melted butter, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a separate small bowl, combine the brown sugar and cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, sprinkle a teaspoon of filling mixture, then top with more batter until full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, mix powdered sugar and milk until smooth, then drizzle over cooled muffins.
