- 2 cups jasmine rice
- 1 pound boneless chicken thighs
- 1 can coconut milk
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice, coconut milk, and chicken broth. Bring to a boil, then reduce to a simmer and cover.
- Cook for about 15 minutes or until the rice is tender and liquid is absorbed.
- Meanwhile, heat vegetable oil in a skillet over medium-high heat. Add garlic and ginger, and sauté for 1 minute.
- Add the chicken thighs, season with soy sauce and salt, and cook until browned and cooked through, about 6-8 minutes.
- Once the rice is done, fluff it with a fork and serve it topped with the chicken and garnish with fresh cilantro.
Notes
- For a spicier version, add sliced chili peppers with the chicken.
- This dish can be served with lime wedges for extra flavor.
