Coconut Chicken Rice Bowl

  • 2 cups jasmine rice
  • 1 pound boneless chicken thighs
  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice, coconut milk, and chicken broth. Bring to a boil, then reduce to a simmer and cover.
  3. Cook for about 15 minutes or until the rice is tender and liquid is absorbed.
  4. Meanwhile, heat vegetable oil in a skillet over medium-high heat. Add garlic and ginger, and sauté for 1 minute.
  5. Add the chicken thighs, season with soy sauce and salt, and cook until browned and cooked through, about 6-8 minutes.
  6. Once the rice is done, fluff it with a fork and serve it topped with the chicken and garnish with fresh cilantro.

Notes

  • For a spicier version, add sliced chili peppers with the chicken.
  • This dish can be served with lime wedges for extra flavor.
