Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs, vanilla, and sour cream, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a small bowl, mix the brown sugar and cinnamon together.
  7. Fill each muffin cup halfway with batter, sprinkle with the brown sugar mixture, and then top with remaining batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
