Creamy Hearty Cheeseburger Soup

A deliciously creamy soup loaded with the flavors of a classic cheeseburger, featuring turkey bacon for a lighter twist.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 cups half-and-half
  • 1 cup shredded cheddar cheese
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove from pot and crumble.
  2. In the same pot, add ground turkey and cook until browned.
  3. Add onion, garlic, potatoes, carrots, and celery, and cook until vegetables have softened.
  4. Pour in chicken broth and bring to a boil, then reduce heat to simmer.
  5. Stir in Worcestershire sauce, thyme, half-and-half, and cheddar cheese. Cook until the cheese is melted.
  6. Add frozen peas and crumbled bacon, and cook for an additional 5 minutes. Season with salt and pepper to taste.

Notes

  • This soup can be thickened by adding a cornstarch slurry if desired.
  • For added flavor, consider using smoked turkey bacon.
