- 1 pound ground turkey
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 cups half-and-half
- 1 cup shredded cheddar cheese
- 1 cup frozen peas
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove from pot and crumble.
- In the same pot, add ground turkey and cook until browned.
- Add onion, garlic, potatoes, carrots, and celery, and cook until vegetables have softened.
- Pour in chicken broth and bring to a boil, then reduce heat to simmer.
- Stir in Worcestershire sauce, thyme, half-and-half, and cheddar cheese. Cook until the cheese is melted.
- Add frozen peas and crumbled bacon, and cook for an additional 5 minutes. Season with salt and pepper to taste.
Notes
- This soup can be thickened by adding a cornstarch slurry if desired.
