Crock Pot Chicken and Rice Burrito Bowl

Ingredients

  • 1 pound chicken breast
  • 2 cups brown rice
  • 1 can black beans
  • 1 cup corn
  • 1 tablespoon taco seasoning
  • 4 cups chicken broth
  • 1 cup salsa
  • 1 cup shredded cheese

Instructions

  1. Place the chicken breast in the bottom of the crock pot.
  2. Add brown rice, black beans, corn, taco seasoning, chicken broth, and salsa.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Before serving, shred the chicken and mix everything together.
  5. Top with shredded cheese and let it melt before serving.

Notes

  • For spicier flavor, add jalapeños to the mix.
  • Customize toppings with avocado, sour cream, or cilantro.
