Delightful Spinach and Ricotta Stuffed Shells for Cozy Nights

A comforting dish perfect for chilly evenings, these spinach and ricotta stuffed shells are easy to prepare and absolutely delicious.

Ingredients

  • 12 jumbo pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta shells in boiling water until al dente, then drain and set aside.
  3. In a bowl, mix together spinach, ricotta, half of the mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  4. Stuff each shell with the spinach and ricotta mixture.
  5. Spread half of the marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells on top of the sauce, then cover with the remaining marinara.
  7. Sprinkle the leftover mozzarella on top.
  8. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly.

Notes

  • For added flavor, consider mixing in some red pepper flakes.
  • These shells can be made ahead of time and stored in the refrigerator before baking.
