Easy Healthy Broccoli Pasta

A delicious and healthy pasta dish featuring broccoli.

Ingredients

  • 8 ounces whole grain pasta
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions.
  2. In the last 3 minutes of cooking, add broccoli to the pot.
  3. Drain the pasta and broccoli, and return to the pot.
  4. Heat olive oil in a skillet over medium heat and add garlic and red pepper flakes.
  5. Saute until fragrant, about 1 minute.
  6. Pour garlic mixture over pasta and broccoli.
  7. Add Parmesan cheese and mix well.
  8. Season with salt and pepper to taste.

Notes

  • For a vegan option, omit the Parmesan cheese.
  • You can add cooked chicken or chickpeas for extra protein.
