  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add onion and garlic, sauté until translucent.
  3. Add pumpkin puree, broth, salt, pepper, and nutmeg; bring to a boil.
  4. Reduce heat and stir in heavy cream; cook for 5 minutes.
  5. Serve hot, topped with chopped turkey bacon.

  • For a vegan version, skip the turkey bacon and use coconut milk instead of heavy cream.
