Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 lemon (halved)
  • 1 bunch fresh herbs (rosemary, thyme, or your choice)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the olive oil evenly over the chicken.
  4. Season with salt, black pepper, garlic powder, onion powder, and paprika.
  5. Stuff the chicken cavity with lemon halves and fresh herbs.
  6. Place the chicken in a roasting pan and roast for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 15 minutes before carving.
