Eggs Cocotte

A delightful dish combining eggs, turkey bacon, and creamy spinach.

Ingredients

  • 4 eggs
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop into small pieces.
  3. In the same pan, sauté the spinach until wilted.
  4. In a mixing bowl, combine the eggs, heavy cream, Parmesan cheese, sautéed spinach, salt, and pepper.
  5. Grease ramekins and pour the egg mixture into them.
  6. Top with chopped turkey bacon.
  7. Bake in the oven for about 15-20 minutes until the eggs are set.
  8. Serve warm.

Notes

  • For added flavor, consider adding herbs such as thyme or chives.
