Fresh & Zesty Spaghetti Pasta Salad

Ingredients

  • 8 ounces spaghetti
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Instructions

  1. Cook spaghetti according to package instructions; drain and let cool.
  2. In a large bowl, combine cooked spaghetti, cherry tomatoes, black olives, cucumber, red onion, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the salad and toss until evenly coated.
  5. Let the salad sit for at least 30 minutes in the fridge before serving to allow flavors to meld.
