  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the bell peppers and zucchini, cooking for 3-4 minutes until they begin to soften.
  4. Stir in the cherry tomatoes, salt, and black pepper; cook for another 2-3 minutes.
  5. Remove from heat and stir in fresh parsley before serving.
