Garlic Butter Shrimp Stuffed Peppers

A delicious and easy recipe for garlic butter shrimp stuffed peppers that is perfect for a quick dinner or a special occasion.

  • 4 large bell peppers
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice
  • ½ cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, melt the butter and add the garlic. Sauté until fragrant.
  4. Add the shrimp, paprika, salt, and pepper. Cook until the shrimp is pink.
  5. Mix in the cooked rice and half of the cheese.
  6. Stuff the mixture into the bell peppers and place them in a baking dish.
  7. Top with the remaining cheese.
  8. Bake for 25-30 minutes until the peppers are tender.

Notes

  • For a spicier version, add some diced jalapeños to the filling.
  • Serve with a side salad for a complete meal.
