Garlic Herb Roasted Potatoes with Spinach and Eggs

A delightful dish that combines garlic herb roasted potatoes, fresh spinach, and eggs, perfect for any meal of the day.

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups fresh spinach
  • 4 large eggs
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then toss them with olive oil, minced garlic, thyme, rosemary, salt, and pepper on a baking sheet.
  3. Roast the potatoes in the preheated oven for about 25-30 minutes or until golden and crispy.
  4. Add fresh spinach to the baking sheet, stir well, and make four small wells in the potatoes.
  5. Crack an egg into each well, season with salt and pepper, and return to the oven.
  6. Bake for an additional 8-10 minutes or until the eggs are set to your liking.
  7. Remove from the oven and serve warm.
