- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups fresh spinach
- 4 large eggs
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes, then toss them with olive oil, minced garlic, thyme, rosemary, salt, and pepper on a baking sheet.
- Roast the potatoes in the preheated oven for about 25-30 minutes or until golden and crispy.
