  • 1 pound baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, minced garlic, paprika, Italian seasoning, salt, and black pepper.
  3. Add the chicken thighs and baby potatoes to the bowl and toss until they are well coated.
  4. Place the chicken and potatoes in a single layer on a baking sheet.
