Ingredients

  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, beat together butter and brown sugar until smooth.
  4. Mix in the molasses and egg until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Form balls of dough and roll them in granulated sugar.
  7. Place them on a baking tray lined with parchment paper.
  8. Bake for 8-10 minutes or until the edges are set but the centers remain soft.
  9. Let them cool on the tray for a few minutes before transferring to a wire rack.

Notes

  • For softer cookies, slightly underbake them.
  • These cookies will continue to cook after being removed from the oven.
