  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
