  • 5 cloves garlic, minced
  • 2 lemons, juiced and zested
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 1 bunch fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine minced garlic, lemon juice, zest, olive oil, salt, pepper, oregano, and paprika.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 10 minutes before carving.
