  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the maple syrup, applesauce, vegetable oil, and vanilla extract until well combined.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Gently stir in the grated zucchini and chocolate chips.
  6. Fill a muffin tin with liners and pour the batter into each liner, filling them about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For added moisture, try adding a mashed banana.
  • Store leftovers in an airtight container for up to 3 days.
