- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated zucchini
- 1/2 cup mini chocolate chips
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the maple syrup, applesauce, vegetable oil, and vanilla extract until well combined.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently stir in the grated zucchini and chocolate chips.
- Fill a muffin tin with liners and pour the batter into each liner, filling them about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
