  • 2 cups corn, fresh or frozen
  • 4 slices turkey bacon, cooked and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine corn, cooked turkey bacon, cherry tomatoes, red onion, and cilantro.
  3. Add the cooled pasta to the bowl.
  4. In a small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.
