- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or gruyere)
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- 4 slices turkey bacon, cooked and crumbled
- Salt to taste
- Pepper to taste
- Preheat the oven to 375°F (190°C).
- Peel and thinly slice the potatoes.
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until soft.
- In a baking dish, layer half of the potatoes, followed by half of the onion mixture, half of the cream, and half of the cheese. Repeat the layers.
- Top with thyme, rosemary, turkey bacon, salt, and pepper.
- Bake for 45-60 minutes until the potatoes are tender and the top is golden brown.
