  • 1 cup cooked sausage, crumbled
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine pancake mix, crumbled sausage, eggs, milk, and vanilla extract until well blended.
  3. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  4. Bake for 15-20 minutes until golden and a toothpick comes out clean.
  5. Allow to cool slightly before serving.
