A delicious and creamy pasta dish made with hummus, perfect for a quick weeknight dinner.

Ingredients

  • 8 ounces pasta of choice
  • 1 cup hummus
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1/4 cup parsley, chopped
  • salt to taste
  • pepper to taste
  • 2 tablespoons lemon juice

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the cherry tomatoes and spinach; cook until the spinach wilts.
  4. Stir in the hummus and lemon juice, mixing well.
  5. Add the cooked pasta to the skillet and toss to combine, seasoning with salt and pepper.
  6. Garnish with chopped parsley before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Feel free to add any vegetables you have on hand.
