  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the diced tomatoes, Italian seasoning, and red pepper flakes. Simmer for about 5 minutes.
  5. Mix in the cooked pasta and fresh spinach, stirring until the spinach wilts.
  6. Serve topped with grated Parmesan cheese.
