- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 8 cups chicken broth
- 1 pound cooked chicken, shredded
- 1 cup orzo pasta
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Juice of 1 lemon
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, orzo, thyme, oregano, and lemon juice. Reduce heat and simmer for about 10 minutes or until the orzo is cooked.
