Lemon Chicken Ricotta Meatballs with Garlic Orzo

  • 1 pound ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan
  • 1 tablespoon lemon zest
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, combine ground chicken, ricotta, Parmesan, lemon zest, garlic powder, salt, pepper, and breadcrumbs. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. In a large skillet, heat olive oil over medium heat. Add meatballs and cook until browned on all sides.
  4. In a pot, bring chicken broth to a boil and add orzo. Cook according to package instructions.
  5. In the skillet with meatballs, add minced garlic and cook for 1 minute.
  6. Once the orzo is done, drain and mix with parsley and lemon juice.
  7. Serve meatballs over the garlic orzo.
