  • 1 tablespoon poppy seeds

  • 1 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, and salt.
  3. In another bowl, combine the milk, vegetable oil, eggs, lemon zest, and lemon juice.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill muffin cups about 2/3 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Let the muffins cool before drizzling with the lemon icing.
  8. To make the icing, mix the powdered sugar with lemon juice until smooth and drizzle over the cooled muffins.
