  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, and egg.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Stir in poppy seeds and lemon zest.
  5. Divide the batter evenly among the muffin cups.
