  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 cup raspberry puree

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, incorporating fully after each addition.
  5. Mix in lemon juice and zest until well combined.
  6. Pour the cream cheese mixture over the crust.
  7. Spoon raspberry puree on top and swirl with a knife.
  8. Bake for 50 to 60 minutes until set, then remove from oven and let cool.
  9. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Raspberry puree can be substituted with other fruit purees.
