Marry Me Chicken Soup

Ingredients

  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 6 strips turkey bacon
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Add onions, carrots, and celery to the pot and cook until softened.
  3. Add garlic and cook for another minute.
  4. Pour in the chicken broth and add the chicken breasts. Bring to a simmer.
  5. Cook the chicken for 20 minutes, then shred and return to pot.
  6. Add spinach, thyme, salt, pepper, and chopped turkey bacon. Cook for an additional 5 minutes.

Notes

  • Serve with crusty bread for a complete meal.
  • Can substitute chicken with cooked rotisserie chicken.
