Meaty Tortellini Salad

A delicious blend of meaty flavors and pasta in a fresh salad.

Ingredients

  • 16 ounces cheese tortellini
  • 1 pound Italian sausage
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing

Instructions

  1. Cook the tortellini according to package instructions and drain.
  2. In a skillet, cook the Italian sausage until browned. Drain excess fat.
  3. In a large bowl, combine the cooked tortellini, sausage, cherry tomatoes, cucumber, red onion, black olives, and parsley.
  4. Pour the Italian dressing over the salad and mix until well combined.
  5. Refrigerate for at least 30 minutes before serving.
