Mediterranean Frittata

A delicious Mediterranean frittata recipe featuring turkey bacon and chicken ham.

Ingredients

  • 6 eggs
  • 1 cup diced vegetables (bell peppers, onions, spinach)
  • 4 slices turkey bacon, cooked and chopped
  • 4 ounces chicken ham, diced
  • ½ cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add the diced vegetables and sauté until softened.
  5. Stir in the turkey bacon and chicken ham.
  6. Pour the egg mixture over the vegetables and meats.
  7. Sprinkle feta cheese on top.
  8. Cook on the stove for a few minutes until the edges start to set.
  9. Transfer the skillet to the oven and bake for 15-20 minutes until fully set.
  10. Remove from the oven and let cool slightly before slicing and serving.

Notes

  • Feel free to add any other preferred vegetables.
  • Can be stored in the refrigerator for up to 3 days.
