1 cup sweet potato puree
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 large eggs
1 cup sugar
1/2 cup melted butter
1 teaspoon vanilla extract
1 cup evaporated milk
1 cup sweetened condensed milk
1/4 cup dark rum
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon cinnamon
Instructions
Preheat the oven to 350°F (175°C) and grease a cake pan.
In a bowl, mix sweet potato puree, melted butter, and eggs until smooth.
In another bowl, combine flour, baking powder, and salt.
Mix dry ingredients into the wet mixture until just combined.
Pour batter into the prepared pan and bake for 30-35 minutes.
In a separate bowl, combine evaporated milk, sweetened condensed milk, and rum.
After the cake cools, poke holes in it and pour the milk mixture over it.
For the topping, whip heavy cream and powdered sugar until soft peaks form. Add cinnamon and mix.
Spread the whipped cream over the cake once it is thoroughly soaked.
Chill before serving.
Notes
For an extra flavor kick, add a splash of vanilla to the whipped cream.
Serve with a sprinkle of cinnamon or nutmeg on top for garnish.
