Mexican Coleslaw

A refreshing and colorful twist on traditional coleslaw that perfectly complements BBQ dishes.

Ingredients

  • 4 cups green cabbage, shredded
  • 1 cup carrots, grated
  • 1 red bell pepper, diced
  • 1 jalapeño, minced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cabbage, carrots, red bell pepper, jalapeño, and cilantro.
  2. In a separate bowl, whisk together the mayonnaise, lime juice, cumin, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss well to combine.
  4. Refrigerate for at least 30 minutes before serving for the best flavor.

Notes

  • Adjust the heat by adding more or less jalapeño.
  • For a lighter version, use Greek yogurt instead of mayonnaise.
