Mexican Stuffed Pepper Casserole

  • 3 bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef until browned.
  3. Add the cooked rice, black beans, corn, salsa, cumin, and chili powder to the skillet.
  4. Mix well and transfer to a baking dish.
  5. Chop the bell peppers and place them on top of the mixture.
  6. Sprinkle shredded cheese over the top.
  7. Bake for 25-30 minutes until the peppers are tender and the cheese is bubbly.
