  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, sugar, brown sugar, and vegetable oil until smooth.
  3. Add in the eggs and vanilla extract, mixing until well incorporated.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill each mini muffin cup about 2/3 full with the batter.
  7. Bake for 15-18 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, sprinkle additional cinnamon sugar on top before baking.
  • These muffins can be frozen for longer storage.
