  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar

  • 2 large eggs
  • 1/2 teaspoon lemon juice

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of muffin cups lined with paper liners.
  4. In a separate bowl, beat cream cheese until smooth, then add powdered sugar, vanilla, and lemon juice.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust in muffin cups.
  7. Bake for 20-25 minutes or until set.
  8. Let cool, then refrigerate for at least 4 hours before serving.
